At what level will I be able to craft new stuff? At level 10 I still can only do the most basic of stuff, and I don't seem to be able to find the guardian spirit quest mentioned constantly in the tips.

The Guardian/Spirit Quest is on Prontera, in your job's respective NPC.
Lvl 1 Guardian (Job lvl 10)
- 10% Haste and Vigor, 30% Movement Speed.
Lvl 2 Guardian (Job lvl 30)
- 20% Haste and Vigor, 60% Movement Speed.
Lvl 3 Guardian (Job lvl 45)
-30% Haste and Vigor, 90% Movement Speed.
Lvl 1 Guardian (Job lvl 10)
- 10% Haste and Vigor, 30% Movement Speed.
Lvl 2 Guardian (Job lvl 30)
- 20% Haste and Vigor, 60% Movement Speed.
Lvl 3 Guardian (Job lvl 45)

An addition to the above, you should be able to buy new recipes from your crafting expert npcs every level or so. You are not stuck making basic items.
