how often does the sage skill hocus pocus allows you to tame mobs?
if its procs at a decent rate wouldn't it be nice to tame expensive pets like incubus and alice?

well, It's not very common, i haven't expirimented with it so much yet...
I can tell you the rates are pretty low, most of the time the (???) skill does monocell, which turns the mob into a poring.
Second to this, Looking at the market I think the rates are low, because otherwise there would be more people selling these eggs.
but yeah indeed, your idea isn't wrong at all^^, also, it's still unclear whether you can tame untamable pets as well...
It'd be fun to find out don't you think ^^
(Just be careful, as you can also change or summon more dangerous mobs.)

I tried using this skill to tame pets while Sakray server was up. Thousands of gems later it still didn't even cast the tame "????" once...

I used to have an HP sage once. You get more chances of '????' if you have a little more luck, but '????' doesn't mean you'll get to tame a pet, its one of the 10 random skills that '????' does. ( skills like monster change, which changes any monster MVP or not into a poring, and there's one that changes one monster into an MVP, grampus morph which makes you look like an orc for a few minutes, an insta-kill skill on any monster, instant death on the HP caster, rejuvination...etc..)

but I agree, back in the old Hocus Pocus Glory days, I only tamed a poring once after a gazillion tries, its very hard to do HP nowadays because you consume yellow gemstones to achieve it, back in the old days you just need a dancer and a bard to cast Power Cord and you can use an unlimited amount of gemstones.
