I just started the game and it seems okay so far, but I really don't like being forced to craft in MMOs. How mandatory is crafting in RO2?

Not very. You'll receive a couple of crafting-centric quests early on, though other than that you aren't really expected to craft anything in order to hit lvl 50. Though if you don't craft anything, you'll find yourself spending more zeny on generic and inferior products (i.e. potions, food) and spending more time and effort to obtain better equipment (weapons, armor, accessories etc). The ability to summon a guardian is introduced through crafting at (correct me if I'm wrong) level 20, and then there are periodic quests in intervals of 10 levels or so to empower it.

Of course if you don't need a guardian (which you really shouldn't) and have adequate time and resources to not have any prominent reliance on craftable goods, then you needn't bother with crafting in the long run.

(I wouldn't recommend it ignoring it entirely, experiment with the crafting system a little with your preferred profession to discover a little more out for yourself.)

Only mandatory thing you have to do is pick a profession from the character creation screen. Other than that, you can choose not to craft. You can ignore job leveling if you want to.
