Let's do this then, percentages based on lv50.
If you do only STR/AGI or INT/AGI
41 STR or 41 INT= 82 ATK, 1.8% Parry
41 AGI = 3.7% CRIT, 1.8% Dodge
If you do only STR/INT
41 STR = 82 ATK, 1.8% Parry
41 INT = 82 ATK, 1.8% Parry
Tota = 164 ATK, 3.7% Parry (rounding error)
If you do STR/INT/AGI
33 STR + 33 INT = 132 ATK, 3% Parry
32 AGI = 2.9% CRIT, 1.4% Dodge
Now what all the guides say isn't totally wrong, you need both STR and INT, no exceptions. Just from this, you can see that a balance of STR and INT is where you'll get the most of your ATK and parry. This counts for cards also. What depends on you though is just HOW MUCH stats you want for each attribute.

LOL! I saw Justin Wong at E3 this year, I told my friend, oh look it's Justin, he was like Justin who? I'm like he is one whole got full parried by Daigo SF3, Chun vs Ken. He was like oooooooohhhhh
It sort of sucks that people only remember him from his part in this epic match up.

Because it takes more points per each stat increase as you go on. 41+41 = 82, but 50+26 = 76.

That's a bug from RO2base. It definitely adds parry in-game.

Should monk cards focus on STR/INT as well, since there are a number of cards that offer both? Or should they focus on AGI to make up for the lack of it?

Shoot for cards that have a good total STR + INT as well as AGI. The nice thing about this is that you have plenty of options for cards and not just a few like some classes that primarily use either STR or INT. No recommendations since this is your part to figure out.
