At what level or at what point of STR should I stop and start dropping points in AGI for a swordsman on my way to be a tank knight?

If you're just starting out with no gear shortcuts (which means you'll be doing RHDs for blue gear once you get to 50) you should open with a balanced stat distribution, either 33/33/32 or 36/36/25 for Str/Agi/Vit as all these stats are important to tanking and you get more bang for your buck by buying stats while they're cheap (the lower levels)

 

If you opt to take Battle Tactics for improving your threat, you can actually start scaling back the Vit for Int relatively early (Extra Vit isn't particularly important in stats as long as you meet certain thresholds for the content you're doing and it's hard to get Int anywhere other than stats and cards for Knights/Warriors), at this point, 33/33/32 builds that include Agi, Int and Str become more appealing.

 

Once you're in fairly high level gear (I really think you need mostly colo or CoA gear to achieve this, as I don't think you'll get there with just Bapho/PvE H gear, but I don't have that so I'm not 100% sure) you'll find that your Strength is high enough to hit the parry cap (70%) at which point, excess strength above this level only gives attack power and your return on DPS/Threat for Attack power is lower than Crit% and Int for Battle Tactics. If you've reached this level of gearing it's valuable to restat to a balanced 40/40 of Agi/Int as you no longer need excess vit or str.
