So this is going to be a bit of an odd question.

What type of build should one go with if they were to mob 3-10 mobs for an aoe killer?

Should they invest in a perfect dodge set? Should they stay FS?

If there are certain gear choices to be made, what would be optimal?

HP's arent nearly as good at mobbing. They dont have the opportunity for many good pdodge sets. gltx are great at mobbing however , as are rangers((on wargs)).

As a High Priest, I'd say you'd likely be mobbing undead and demon things. I'd get gear to reduce damage from those types of enemies, as opposed to perfect dodge.

Damn, used to love mobbing on my HP. I guess with the way Assumptio works now it's not great.

Right now I'm leveling a sin with quite a bit of pdodge. 67% to be exact. And yeah, attacking one goat and being able to take next to no damage when 23 of his friends join in is kind of nice.
