I'm planning on going amistr>dieter but the thought of having to loyal him twice is just making me sick. How much difference will not having blood lust make when it comes to end game MVPing?

It really not that of a big deal in end game mvp'ing, it just helps abit to level until u get poison mist.

Plus, OP is going for Dieter, which gets its AoE earlier than Sera.
Bloodlust only affects the Homun, not you. Both Dieter and Sera are useful due to the abilities they can endow their owners with.
