I am planning to play on classic server and I have a few questions.

Can I easily find parties in this server?
Is there lot of players are still grinding?

about leveling... people mostly level at Ice Dungeon 3. If you pull titans or buff for them, you can easily get in the party

How can I level up until I reach Ice Dungeon?
only solo leveling?

You can do Janeway quests to boost you to 70. Then at 70 you'll be able to get turn in quest in ID3.

Therearealso other options if turn in quests: like killing alligators / collecting anolian skins to npc which you can do til lvl 81, you can kill goats / collect antelope horns which you can do til lvl 86.

I created thief and im planning to make it rogue. Am I in the right track in farming?

That's a good way to farm antelope horns and anolian skins to sell (and they will always sell) 

 

When you can afford better gear, making a knight for farming is the best way forward. Rogue is good to start though.

I hear potters also buy the empty bottles and blue herbs the goats drop! Bottles and blue herbs are heavy though. I'd advise creating an alt account with a merchant you can mail your loot to. This would enable you to stay on the map longer and for easier vending.
