Is it necessary to take all quests on all maps ?

I'm a newbie here. Very very new xD and i'm confused which quest should i take. Hope somebody can help me!

Not really. If you want you don't have to touch a single quest at all. Or you may selectively choose to do only the quests labeled "main quests" (won't know which until you accept them, usually). Or you may just decide to finish one zone and skip the next entirely if you've out-leveled it. If you're new, you'll most likely have to skip some dungeon quests unless you find someone to carry you because finding parties to do them is not reliable anymore. There's a few zones which you would want to do quests simply to unlock dungeons/areas (Izlude, Payon, Divided Plains, Verta Delta, Alberta).

For the bare minimum: When you reach level 25, you'll generally want to take a trip back to Prontera to find your job-change quests, and once you reach level 50 and want to continue to "Master Levels" you'll need to do the Master Level Tests in Morroc. There's also a few job/profession related quests in Prontera I believe at around 10, 35, and 45 which unlocks your "Guardian skill" which is helpful to have.

The first 50 levels are in a bit of a shamble, as they are fairly outdated, so the thing to keep in mind is simply not to let quests hinder you in any way. Do not feel ashamed to skip something and carry on, as you can always go back at a later time when you're stronger to handle it. Hope this helps a bit.
