I killed the golden thief bug for the third time. The quest is still not saying completed. I reset the dungeon, still not completed. Abandoned the quest, and accepted it again, killed the damn bug, STILL NOT COMPLETED! Why is it not showing it's completed?!

Hello there.
If this is the quest "The bug is too big" that is accepted from Maden, then it is not the regular Culvert's Golden Thief Bug. There is a separate solo dungeon that this quest is related to, which is found in the bottom of the Dungeon Finder (Shortcut key: N)

It's like was said, it's not by entering the portal to the dungeon, it's by the shortcut: N ^^ I had the same problem first time I made this quest hahaha!

trying to do ep1 and golden bug is insanely hard??? should it be that hard?

Hello xKiriyux,
"Eremes's Ep.1 Culvert" is definetely hard but as always: practice makes perfect!
You can watch this video here submitted by a player so you can have a more clear idea of how the skills function. Make sure to be very careful when the Purple Warning message pops out, you will have to press the Dodge skill right after or you are going to die instantly. The Purple Warning will appear twice when the Boss has around 30% and 10% HP left circa (I am not very sure about the exact amount of HP left 
).
I am sure that once you have practiced a bit, you will become a true professional "Golden Thiefbug Slayer"!
