It's been a really long time since I play RO so I am at a total lost here. I saw on a forum somewhere that there is a class called Paladin and that you can reborn your character. Can someone explain to me if this is true? If so what does reborn do?

Hello, when you hit base level 99 with your crusder you can rebirth to High Novice, then to High Swordsman and then to Paladin. So basically when you get reborn youll start from level 1 again, with 100 stat points to spend and youll have to level again. But instead of changing to Crusader, youll change to Paladin. When your Paladin is base level 99 you can trans to Royal Guard and continue leveling up to level 150. I personally suggest you to always go for max job level for maximum skill points to spend on skills. Hope this helps, might be a bit confusing explanation.

Wait I am a bit confused here. So I currently have a Swordman > Knight > Lord Knight. Is it still possible for me to reborn. Also just to clear things up a bit here. Once I reborn I will be a high novice and from high novice I can then convert to paladin > crusader > royal guard?

You started out as a novice > Swordsman > Knight.
That's what you're at right now I'm assuming (knight). Once you hit 99/50 as a knight you have 2 choices; 1) Rebirth or 2) Change to a Rune Knight [3-1 class]... Changing to Rune Knight from your 2-1 class Knight is a bad choice because you lose the access to the much stronger and useful skills that the Rebirth 2-1 Lord Knight class has and a +25% boost to hp/sp.
Ribirthing will reset your character from 99/50 Knight back to a novice. However, you will now be a high novice which will change into a high swordsman. Once you get to job 40 on your high swordsman (just like on the regular swordsman) you can change job to Lord Knight [Transcended 2-1 class]. Once you hit 99/70 on your Lord Knight you can job change to Rune Knight.
Break down is this
Novice --> Swordsman --> Knight ==not advised==> Rune Knight
..........................................|
..........................................|=Transcend=> High Novice --> High Swordsman --> Lord Knight ==advised==> Rune Knight
