I have looked and figured out how to work my skills already but i have no clue how the DNA stuff works im currently a level 18 defender so if anything what DNA build is best for me atm and what should i do in the later levels?

Well, the dna build like the skill build is related to the 2nd job you want to pick. As defender there arnt many dnas that worth, you have the one for Skin of Stone and the one for Survival Instinct. Depending on the 2nd job you want, the amount of points, but a setup could be 6 points in the dna of Survival Instinct and 1 in the dna of Skin of Stone.
