Well... let's see I'll try to put up a rough translation of their English Names If I can remember the words.

Bangungot = The state of Sleep Paralysis, meh don't know much of this Monster in our lore.

Manananggal = Remover... but RO already has a Remover Monster, Our equivalent of Vampires... at night they seperate from their lower half and hunt for humans to eat. They can be killed by pouring Vinegar on their detached lower half's opened side. In the morning they disguise themselves as Animals (usually a black dog)

Engkanto = Spiritualist

Mangkukulam = Yey a Witch!

Tikbalang
They're like half human horse monsters. Horse Head and Legs but the arms and torso are human.

Tiyanak
A Demon that disguises itself as a baby and cries out loudly in forests then attacks and eats its victims.

A shame they didn't add Kapre's...

Also... I demand that their be a Tool Dealer there that sells special Usable Items labelled and designed to look like Balut!!!

Yeah, I am pretty disappointed that they're not included.

There's a huge chance that Balut will be included as one of the foods, maybe Halo-Halo as well.

I think that Bangungot is also translated as nightmare. The sentence "Binabangungot ako." come to mind. (I'm having nightmares)

When used by my parents when I was a kid, we're told that we're not supposed to fill ourselves with food before heading to sleep, because it causes bangungot, as mentioned earlier, a state of sleep paralysis for a certain period of time. It is known by word of mouth among the older generations of filipinos that there were some cases that people who got bangungot never woke up again, like in some sort of coma and even death.

I asked my dad what Bungisngis is. Its a form of grinning, usually showing/baring some teeth to someone.

Bangungot - nightmares or possible death caused by nightmares. Also believed that if you eat too much before sleeping might cause you death by nightmare (as it was translated by the fat monster spirte)
Bungisngis - hysterical laugh while grinning.
Buwaya - just a simple crocodile .. it refers to corrupts politicians. Buwaya is the metaphor for greedyness in the Philippines.
Engkanto - dryads that inhabits in nature .. friendly or not depending on how you treat nature.
Mananangal - translated as "The Remover". They are demi-humans. They are in their human form in morning and monster form at night.They separate half of their bodies at night to hunt for pregnant women victims by going to roofs to make holes for their tounge to penetrate and impale pregnant women's belly buttons to suck life force.
Mangkukulam - witch that performs both harmful and healing abilities.
Tikbalang - half horse half human. Believed to be that if you get one strand of its golden mane shall grant you a wish.
Tiyanak - a demon child. Normal children possesed by the souls of aborted children via means of abortion. They wish for either an apology or revenge.
Wakwak - the Philippine gargoyle. Does not turn into stone and does not attack people until some sort of a festival.

Also as I have read the Philippines Forums there is another poring that they'll be releasing .. the "Jejeling" (for other information browse for "JejeMon"
It is a rainbow poring as rumor says. No sprites have been released yet.

For MvPs I think Kapre wouldn't be suitable.
There are lots of monsters in the Philippine folklore not yet included such as:

Nuno Sa Punso - Gnome that lives on a mound of dirt
Dwende - Dwarf
Tiktik - stalker that changes into either human form or animal form.
Aswang - Philippine vampire

and by the way:

Kapre - a giant that mostly can be found on trees. Often with cigarettes.

I think "Ibong Adarna" would be suitable as an MVP even though it is not a monster.

Also rumors about that Ninja's 2nd job change will be on the Malaya Map says that maybe has something to do with the Philippine martial art "Eskrima" which uses 2 handed weapons.
(Noting that the fan art features multiple swords for Ninjas)
