Why do our 60/70/75 sets have absolute defense on them? As far as I know, they are completely useless on a twin as we already have 100% block rate when weaving...

Why do Paladins have Absolute Block Rate? It's a stat; one skill does not decide the entirety of everything about your character and Weaving has its limits.

Either twins have a natural block rate or in the 4th job skills they get a block rate one..

Now you have more than 100% block rate when you weave. Weave in power! Weave in confidence!

Good point, I didn't think about 4th job abilities. I'm going to laugh if we get a passive block rate, though.
