The wiki tells me that Spell Fist should work with double attack and it is considered melee damage. I am curious as to whether it would function with Hydra Cards. Also, would crits increase damage from Spell Fist? Is it possible to crit with a Spell Fist hit?

Spellfist isn't a true melee attack. It's forced melee.
The damage is calculated as a lvl 15 bolt spell.
Hydra cards an such don't effect spellfist damage equation. But any effect that boost matk and bolt spells
does increase spellfist damage.
Spell fist doesn't crit.

Spell Fist always hits regardless your hit rate, procs with Double Attack, and it's affected by Siroma and Imp cards (for CBolt SF and FBolt SF, respectively), where a pair will greatly increase the damage.
And melee-defending skills like Guard or Shield Reflect will affect SF too.

Wait, wait, wait, wait. I PvP'd yestarday on my Sorcerer and my Spell Fist hits were missing on high flee players. Are you 100% on this?
Furtherly, I need suggestions for headgear cards for a melee sorcerer.

I've leveled my AGI Spell Fighter sorcerer at raydrics (Chiv1) once, while his Hit was below 330 (you'll need 402 for 100% Hit), I've even leveled in places like Holy Grounds 1 or Abyss Lake 1. In all of those cases you'd need over 380 ~ 400 Hit for 100%.
And in my tiny PvP experience (and my PvPphobia) I've killed a GX with SF without miss, and a LK too (we both died at same time), so SF doesn't miss regardless your Hit rate, and again my Hit was around 330 in that time.
Don't forget that SF has a catch: you have to deal those hits before cast any skill, or SF effect vanishes and you have to load it again.
