What are some general tips? I usually die in a combo or two.
And I always get caught off guard when I think they are about to be launched but instead block it.

Assume every launch is going to fail, don't rely on them launching to save you from an attack. Plant backup traps for when sword dance hits you. Other than that, hit, run, and good luck. You can also psyche out some of the less skilled paladins by hitting them with bleed, which'll make 'em wanna go into barricade. At this point, run up to them and hit them with every trap you have because they'll be tabbing out shortly. Begin comboing then. This won't work for all paladins and you should expect to change your strategy.
Watch the player's intelligence and note every single thing that they do in response to different stimuli. Begin plotting out countermeasures against your opponents before they make that attack. Intelligence is a large part of pvp, as it determines if people will fall for a trick, and if they do, how quickly they'll figure out the weakness behind it.

I really feel the need to stress that unless you're careful as hell, you'll get caught by sd. I wish I could log on now to help you with this but can't :l
