All classes have a shield slot but there are some classes that have more variety. For example, most other classes can only wear almost always class-specific bracelets. Knights can wear Shields, Fighters can wear Kickballs, and Summoners can wear Talismans. You don't have to wear a shield as one of the "better" items is called Skeleton Bandage which is technically an all-class bracelet and therefore does not show up as a physical shield.
Just about any class in this game is all about fast-paced combos. As a Knight going up to Dragoon you'll have a pretty decent amount of skills to combo together, ranging from on the ground [Spear Jab, Cross Cut, Rolling Ground] to in the air [Spin it Bear, Mega/Stormblade, Chain Shield]. Just about every class is considered "AoE." Gladiators play differently and don't pick up as much as a Knight until around your second job change. As a Dragoon, you can reach pretty high damage numbers through Critical Damage, while as an Overlord you can reach high pure ATK as a stat through a certain skill. Both have their good points. However, Knight -> Paladin -> Dragoon is often considered overpowered and generally good at about everything, if that influences your decision.
However, if you're looking to spam quick, low-cooldown skills and keep some fast-paced action you may want to take a look at Assassin or Twin Fighter. These both have a wide range of skills that make use of quick combos. Knight is very user-friendly and easy to learn, however.
Here's a video of some general Knight/Paladin/Dragoon playstyle once you have all your skills:

No, Knights use one-handed swords and Gladiators use two-handed swords.
