Gankutsuou: The Count of Monte Cristo,
Mononoke
to name a few.

FLCL is essentially GAINAX testing their artistic abilities, with a very odd storyline patched together. The episodes are built around the soundtracks, so it flows quite nicely.

.Hack//Sign probably was a heavy influence for Sword Art Online, as they're both MMORPG animes revolving around offline consequences. It's dialogue heavy, with action scenes few and far between.

Last Exile is a steampunker series with airships; nice, slow-ish.

Wolf's Rain is nice, though a bit heavier than the others. Post-apocalyptic setting, with a chosen-girl-being-escorted theme being blatantly used.

Gankutsuou is scenery porn. If you've seen the background in the Cartoon Network series "Chowder," you have a good idea of what to expect. There's a superb trailer on youtube somewhere. So wunderbar.

Mononoke: This is the reason I watched. The main character is a full-time medicine salesman, part-time exorcist/detective. The series is very short, and hard to find, often being confused with Princess Mononoke in searches. There are 3-4 story arcs, with each taking 2-4 episodes to finish. The art was to die for.
