Class for newbies

If possible, I'd also like a build for said class(es). Dragonkin are an available option for me as well, however I know both are fairly challenging for new players.

Summoners are not a very good starting class in my opinion because the first few levels play slowly and do not give you the same feel for the game itself as the other classes and balancing your skill tree is much more difficult, however it is a strong class given all there is about it. Fighters are a neutral choice to me, because you do get to experience the same level of skill-spamming quickness as other classes, but you may get a wrong idea for your role in a party. And not to mention that Fighters seem to be a very PvP-oriented class. Don't get me wrong, any class can do both, but Fighters play in a very PvP-styled fashion in my opinion.
Also I think you should not be so quick to dismiss Monk -> Invoker. A majority of the time is spent spamming X, yes, but there are skills to use. However, you would not get the same level of necessity of being "the healer in the party" in this game as you might in others.
I also do not think Marksman -> Specialist is a very good choice for your first character because it, in my opinion, requires a bit more skill and does not offer much in F7. I cannot speak for the Pathfinder class very well. Gladiator -> Overlord is not a bad choice for your first class, but given the choice between Knight -> Dragoon and this, I would say to be a Knight as its much more user friendly and easy. Savages are also a pretty fun class and do pretty well in PvE, but you will be spamming the same three or four skills for your entire career as one. Finally, War Mages are also decent to get the feel of the game down but you will fall behind other classes, in my opinion.
Note that I find that Thief level 1 to 20 is the most difficult of the initial job branches, in case you were planning Ninja. I recommend Ninja or Dragoon to you ultimately. Ninjas will be using several more skills and be a tad bit more situational in PvE than a Dragoon. A Dragoon will mostly just tear through anything in a linear path. Both are good for F7, but Ninja is better, in my opinion.

Boss: Assassin > Wizard > Knight
Safety: Wizard > Knight > Assassin
*this is for like.. Lv. 25-50. For Lv.1-25, warrior > all. for 50+s, not sure, haven't tried all of them over that level yet

I'd say Assassin, Knight, or Wizard. Assassin would be the best class for newbies other than priests. Playing thief might be a little tiring though, but it really pays off once you change to assassin and get the daggers, same for wizards I guess but with blizzard. Knights are pretty good all the way but when it comes to bosses, I think the other 2 kill much faster. Let me just rank them for you :s
Mobs: Knight > Assassin > Wizard

I'd just like to note that I do not necessarily agree with this. Wizards will be a bit better at grouping and AoEing mobs earlier on [In the 2x's], but from 1-80 a Wizard never has the ability to groggy a boss ever and will fall much further behind Assassin and Knight after they job change at 40.
EDIT: Saw your edit. That's okay then! I just think noting the groggy is a very important factor for bossing and WMs definitely become lackluster in this area, especially compared to the "almighty" Ninja and Paladin classes.

oh yeah I forgot about f7. i think wizards are the best class to use in F7 among those 3, only problem is that most of its skills aren't affected by elements (elements make killing bombs, which towers don't attack, easier) and your attack doesn't do AOE, unless you take battle hit but I don't think you should.
don't try summoner, it will bore you.
attack them with X, and i think missiles are affected by elements, correct me if i'm wrong

That's like, your opinion, man. If we're talking about F7, Summoners are amazing there. Plus, you'll be incredibly happy late in the game right now if you roll a summoner.

I actually do have a Summoner and don't think it's too bad. Most missions go swimmingly with other people and can only be a minor trouble if I fly solo. Would you still recommend the Knight over the Summoner?

If you intend to ever upgrade your equipment towards the endgame, know that both of these classes will give a pretty nice boost in terms of damage for an upgraded weapon. Dragoons can stack insanely high amounts of Critical Damage, so if you have even a +15 sword you can hit pretty high numbers. Summoners on the other hand are capable of getting the highest Magic Attack possible in the game, but this is only more noticeable the higher you upgrade a weapon. For example, there does not seem to be too big of a difference at +15 for a Summoner and a War Mage, but at +20 a Summoner can reach 30,000 Magic Attack or more! I don't know if you fully comprehend the scale of Attack values yet, but this is a very high number. Ultimately you should maybe try both and see which plays more fun for you. There's no harm in starting off with a more advanced class and asking for a few tips, but I think as a Knight you would understand your skills through your own play experience a little easier.

It is true that Summoners X-spam a bit as well, but it's in a different fashion. In my opinion, the way a Summoner X-spams almost feels supplementary. Not to be confused, the X-spam from a Summoner using Smare Shot is indeed the highest DPS they have, but the way a Summoner plays leads you to not actually feel like you're only X-spamming as much as you would on a Priest, I think. That was a good thing to point out though, because Momiji might not like that.I heard summoners X-Spam a lot too and afaik that's what he's trying to avoid. And yes, of course, whenever someone says something is boring, it's an opinion

Invokers is mainly just x-spamming. You don't get your best skills until you are 60+... Spark Rock isn't as effective as double shot unless it has the magnet (or unless the mobs are just so clustered toegether), but Rain of Fire is decent for PvE. They are decent against bosses - more to the better side imo, even though they can't groggy easily (Only Spark Rock does significant groggy). They are just easy to play... x-spam and dodge. Simple. And they can heal.
