Edit: Actually let me elaborate
Holding Z will trigger the OS mechanism for repeating keys (e.g. sending the signal for that key and then delaying for a set amount of time) whereas tapping z is just sending the signal for that key. If your tapping Z is more synchronized to the delay between when it is physically possible to shoot another arrow (frames shooting an arrow takes and the delay afterwards) then your AAS will be faster. What I mean by synchronized is the delay between when you tap Z and when you tap Z again is closer to a multiple of the time it takes the game to register an AAS shot.
In most/all cases holding Z will be faster simply because the delay interval is really small (something on the order of 40 ms) whereas tapping Z has significantly higher delay.

Just kidding. But seriously, AAS helps both archer classes almost to the point of necessity (so you'll need it to be effective).
