It's because of their Unstable Doping skill.
At max level, every time they use a potion that heals HP, they get an Attack buff equal to 10% of the amount of HP healed. And they can stack the effect, until the Attack buff is equal to 30% of their base Attack from equipment and stats. Using even tiny healing potions after that refreshes the duration on the buff.

Alchemists can make stronger potions for cheaper, if they're willing to spend the time gathering ingredients. So they can reach that 30% cap faster.

I still think it's a matter of taste. For example, blacksmith allows you to craft your daggers and with the right receipe, you can craft yourself a Desperate Apostle Dual Dagger. Also Artisan is nice for getting clothes better than your gear, and being a melee class that kills one mob after another, artisan works really nice (kill -> loot -> gather -> kill -> loot -> gather etc.). My first Rogue was Alchemist and tbh, the biggest advantage was the boost and buff potions. Practically, I had permanently activated either str or dex buff pot, and using booster potions when fighting bosses. But at a certain point you'll run out of maths for making reds, and especially rogues have a hard time farming maths (best solution is wasting a point on rolling cutter to kill many low level mobs at once). The point I reached 40+ I didn't care anymore for crafting my own red potions, doping uses up so many pots that I prefered buying them instead. Especially because I found it more important to be able to keep many potions in 1slot, rather than having them heal more (which is wasted in 99% of the case since you only need pots to keep adrenaline rush effect activated). But other jobs have their downsides too. Artisan are surprisingly useful in the beginning - you can always use gear way better than those you get through quests, but soon when you reach lvl20+ you'll start to notice, gears need maths that are pretty hard to obtain at this point. At this time, I felt sorry for not being able to craft boost and buff pots. So personally, I think Alchemist is really useful, but not mainly for the red potions.

Don't go for blacksmith... dungeon drops are better. Only usefulness of blacksmith is to make rune punchers.

Cooking is okay

Alchemist is really really good for rogue

Artisan is the easiest to level and is also very handy... but again dungeon drops are better.

I wondered about this myself. I figured Alchemist for the cheap pots for Unstable Doping and the boost potions for burst DPS boosts. I also considered Chef for the other buffs but I would need to see a list of the craftable foods to say for sure. I'll probably go alchemist myself but I feel like there will be a LOT of rogue alchemists. I hope they introduce Advanced Crafting Jobs eventually along with 2nd classes. Fingers Crossed XD
