Which is better for handling adds in dungeons? Or should I get both of them?

You should get both, but putting more than one point into Inferno is pointless. Higher levels of Inferno only increase the initial damage slightly, and the primary purpose of the skill is supposed to be as an AoE Firestarter.

Okay thanks lol. What about fire explosion ? Should I level it up high or one would be enough?

Some people choose not to get it since the stun is worthless (3 sec stun but 2.5 sec animation).

I have one point in it just to finish off my Pyromaniac.

I would definitely put 5 points into Fire Explosion if I were you. If you want to know why I suggest this go see the damage calculations I have done in the Wind Arms vs Fire Arms thread.
