Do they tank the some ammount or lose anything with each type of weapon?
About the skills.. Are they stun based, area.. target..

They can both achieve the same defensive power (no losing out on defensive passives, since they are all separate from the crossbow and sword tree).
The sword loses out on attack power compared to the crossbow knight (only 40% passive attack power), and has more area based attacks (AOE cooldowns are 5, 4, 6, and 8 seconds respectively).
The crossbow has more attack power, accuracy, and has defense pierce, and is a lot better in 1v1 combat (thanks to defense pierce, magic shot and fire shot). Although you can get an AOE on crossbow knight, it has a 10 second cooldown and doesn't really do a lot of damage.
There's two stuns, both of which are in the shield tree, so they can actually be gotten by both, but the second one isn't really that worth it in my opinion (too costy on skill points, low cooldown but only 20% stun chance or something).

So if I already have a spear champ to AOE, I can become a crossbowknight to lure better and kill kings, hmm?
And about the stats... I`ve noticed 2 str or 2 dex add like 1 atack power, but str does increase defense, hp, and weight limit. So I may become str build?

Yeah, that's a possiblility.
Also, knights definitely need strength. Dex is optional for the increased off hand defense (one of the passives), but you will need 300str at a minimum, regardless of what you want to do with your knight.
