Is there any way to tell if a monster will give fabric or leather?

Certain monsters give different supplies, some even give both. I'd try different monsters until you find one that gives leather. (More likely from humanoid or beast-ish monsters.)

Generally spoken: humanoid opponents give you fabric, animals give you leather.

Look for any mammal-type monster.
