I have tried a Reinforced Set Int12 Ap20 on and a Brave Set on.
The Reinforced gives me 32 ap more but the Brave gives me a 300 Dodge boost not to mention the % increase for pvm.
Which one is better for pvm and why?

As you stated is why for PVM. More dodge and increase % for PVM. I use reinforced on my cleric for PVM and PVP but it all is refined to 15 and has 60 dodge and 40 mspd substats. If you farm a lot I would use brave.

I prefer courage to brave but honor gear is deffinatly better then reinforced my mage & champ have a lot more def & apo (with the pvm bonus) then they did using 30ap reinforced gear +15

the 20% or so extra HP you get on reinforced vs courage is nice for summons, since they don't get the pvm bonuses. 20% extra defense or offense should be better than 20% HP for most others tho I think.
