Hm... You do want a good mixture.
I say half and half. Your weapon gives a good amount of Hit and Vigor.
Your armors can go any way you like.

Pretty much what Meco said. However, if you can get full CoA (and later AoD) gears, you can get away with going all tank instead of mixing it up because your hit rate won't suffer as much compared to getting full tank Colo/Craft gears.

Uh-oh... I just got the Dodge/Parry Colo weapon because I thought that tanks were supposed to go full Dodge/Parry. Can I get a better explanation as to why this is a problem? I'm worried now.

Yeah the game is pretty flexible when it comes to the gear. Having more Hit and Vigor lets you keep G-Fist up and ready more times, etc. More threat is better. I generally just mentioned weapon because the weapon is generally the one with both good amounts of Hit and Vigor. Of course, if it is like Rukaroa says, then CoA/crafts equips will also be good sources of Hit.
Hit is probably on of a tank's core stats to raise.

Well, the thing about tank gear from CoA is that the bonus set gives you x1.03 Hit Rate it you have at least 4 pieces of tank/dps gear which brings your hit rate up above 97%. To get an equal amount of hit from Colo gear, you'd have to mix and match. CoA tank gear requires no mixing and matching. The downside to going all tank with raid gear that gives bonuses is that you have no Vigor unless you specifically get DPS gear.
Just keep in mind that Hit Rate is the main issue. Vigor is just a bonus for mixing DPS/tank gear up.
