The... instructions are right on top dude.
Left table means the attack is fire element and right table means the defense is fire element.
If that's confusing, then look at this one that splits it by level to make it more digestible: https://irowiki.org/wiki/Element

Left Table: Fire Element attack against monsters of Other Elements.
Example: Maya - Earth Element Lvl 4
> Fire element attacks deal 200% dmg towards her as shown in the table.
Right Table: Other Element attack against Fire Element monsters.
Example: Ifrit - Fire Element Lvl 4
> Water element attacks deal 200% towards him as shown in the table.

OK the table on the left is my fire-imbued offense against monsters of other properties? And the table on the right is my fire-imbued defense against monsters of other properties?
So if I use a card that says my property is changed to Fire, then the table on the right applies?

yes, and for a player character, only level 1 defending element

so as far as the right chart goes, you only really need to focus on the lvl 1 section since all element armors for players are considered lvl 1. if you're focusing on anything past the lvl 1 section on the right chart, its usually because of a specific monster that you need hard details for. AKA, something that's giving you major trouble and you must know every detail for.
