Vitality is simple. Base Heal + (Base Heal * VIT * 0.02). So for example, 100 VIT would be 100 * 0.02 = 2. So at 100 VIT you've effectively tripled the power of your item. It's linear, so every 50 VIT gives you 100% more effectiveness.
All tables use the average healing amount. I left out Novice potions. They have no weight and are free. Technically that makes them infinitely efficient. However they do have a real cost in that you usually have to do turn ins to get them (aside from the starting 600) and those turn in items have costs.
Here's a list by weight (HP per Weight):
Con. White (364.5 HP / 2w) : 182.25
Con. Yellow (204.5 HP / 2w) : 102.25
Con. Red (55 HP / 1w) : 55
White (364.5 HP / 15w) : 24.3
Yellow (204.5 HP / 13w) : 15.73
Orange (124.5 HP / 10w) : 12.45
Red (55 HP / 7w) : 7.875
I left out the Condensed potions in the next list because I have no desire to calculate their actual cost since they're not bought straight from a vendor.
List by Zeny (HP per Zeny):
Red (55 HP / 38z) : 1.447
Orange (124.5 HP / 152z) : 0.82
Yellow (204.5 HP / 418z) : 0.49
White (364.5 HP / 912z) : 0.4
P.S. I only did potions. If you're talking about all healing items...then yeah, that's different. Also, some class skills affect potion healing but they're all by linear amounts, so it doesn't modify the relative rankings at all. Same with VIT, doesn't matter how much you have, it never affects the relative rankings.

In order to compare heal/weight and heal/zeny, you don't need to include vit since it effects all items equally. So all you need to factor in is healing amount, weight, and cost.
It's thus pretty easy, given a list of healing amounts, to make an excel (or google docs if you're willing neither to pay for nor pirate MS office) spreadsheet, and make all sorts of pretty graphs with it. That's what I did.
