If I level my RK or GX to 150 and recruit some decently leveled players do you think it's do-able?

That is do-able on any server if you get enough skilled players.

Right now Valkyrie's the top guild in the server. There is no competition at the moment.

Also I wish WoE 2 realms were open already. >.< I want to hunt WoE 2 equips. Also GMs if you are reading things do not mistake this as me wanting all the castles open I just want 1 of the castles in WoE 2 to be open so I have a change to hunt WoE 2 equips.
