You're suppose to party, like with an aco, though too many ppl are going monk it's causing problems
Even those going Monk usually get Bless/Agi maxed though asap so that still cuts down on potions used a lot. Heal lvl 3 is ok for emergencies as well.
My Monk will get Bless/Agi and Penuma maxed first before the Monk pre reqs.

When I played aco pre-renewal as soon as I got heal and pneuma firelocks were the place to be. Was nice when a priest tagged along for a mag party.
Edit: pick up loot and npc it. Even if you have an aco on your butt to heal you. Notice some folks still leaving loot behind. Even after I spend zeny on healing items I still have around 5k atm. Fluff, shells, jellopy and some other stuff can be exchanged for pots at some npc's in case some people forgot about that.

The only item it's worth it to trade for those red pots is Worm Peelings 1:1 in AlDeBran.
All the other items have better uses or are better sold to NPC.
Remember, Onward to the New World quest takes 300 Jellopy. Also Bio Labs and Veins Siblings take a few as well. It's annoying to go and collect them when your rdy to do those quests though.

None of those quests are even in the game at this point, silly. Plus Onward to the New World will probably never be added since it's a Renewal quest. The only one likely to be added anytime soon is the Biolabs one.
Also see this thread for a complete list of NPCs who trade their potions for your items.

Its a weird feeling being noob again but you have to do what you have to do to get those levels.
My suggestion is to not main a swordman, merchant, or mage class character for your first.
To each their own though. Hope you figure out a game plan and have some fun!

Try making a class that does not need to use a whole lot of potions. Theif for example. With that you can get your flee high enough to spend very little on pots. When I go hunting I normally have a game plan. Either collecting loots or killing everything as fast as possible for quick xp. At level 40 I was able to collect orc loots to sell, and made anywhere from 10-20k in an hour or twos time. With that I can buy 100 red pots for 5,000 zeny. Those 100 red pots are enough to keep me healed for hours to come. Then when I run out, I simply collect loots to sell again.

A well played mage is very potion independent.

Swordsmen going knight are incredibly easy to level without high potion costs because of sitting regen. You can regen about 1k hp in about a minute sitting, so as long as you don't need to pot to actually kill a mob you shouldn't need pots at all. Geez guys learn to sit!
Merchants should all be OC alts and venders at this point though. It's incredibly hard to solo one up without incuring high costs.
(since when do mages use potions.. they get 2 hit by pretty much everything)

Buy Meat or Milk instead, they've a better HP/Zeny ratio.
Also, Mage is the easiest class to level in a new server. Just max your Firewall first, get some Fly wings and you're set.
