Is there a particular stat simulator that is for classic as opposed to renewal? If someone could point me in the right direction that would be awesome.
Also if anyone has any strong knight guides they would recommend let me know.

Another question I have is if a character goes to job level 50 first class, do they keep all the stat bonuses from their job level when they change to second class?

They do not, the only benefit of going job 50 is the extra skill points you get.

And job 50 gives you bonus items usually.

Yeah, usually, when opting to change jobs at jLv50, the guild master NPC will award you more, or better items upon quest completion. (:
