I was just thinking, I don't think that they'd necessarily be good skills to have but, could you copy a homunculus' skill with these?

It is the other way around, they are 2 of the best skills you can have as a shadow chaser because your best PvM skills will be copied skills. And it is very useful in WoE as well as PvP. For homun skills i haven't tried copying one of those so i have no idea if you can copy them or not, They are pretty useless anyways to be worth copying.

You know, I'd need to test that out on some of the Homunc S skills that deal damage. Remember that you can only copy skills that deal some sort of damage, including skills that you don't have pre-requisites for.
