My entry into this delicious event

 

Lovely Choco-Tart

Recipe

90 grams butter

150g 70% chocolate

175ml cream

15g sugar

Strawberries

White icing

120g plain flour

pinch of salt

 

1. To make the tart shell, place 65 grams of the butter, 15 grams sugar and pinch salt into a food processor and beat until light and creamy. Add egg and process for another 30 seconds. Add flour and process until well combined, adding a little water if necessary. Transfer dough to a floured bench and roll to about 3mm thick. Line 4 x 8cm tart tins and prick the bottoms. Place in the oven and bake until golden, about 15 minutes. Remove from oven and set aside to cool.
2. Meanwhile to make the ganache, place 175 ml cream and remaining 25 grams butter in a saucepan and set over medium heat until almost boiling. Place chocolate in a bowl and pour hot cream over and stir to combine. Allow to cool slightly then pour into baked tart shells and place in the fridge to set, about 45 minutes.

3. Decorate as you like

Small tart because i only had cupcake pans....

Tried to make it more heart shaped but kinda unraveled itself during the baking. I did make a coconut creme fraiche to go with the tart and that's easily as mixing creme fraiche with a bit of coconut flavouring and some icing sugar. You do need something sweet to go with this if you used 70% cocoa as i did.

@Camp: that strawberry chocolate cake is glorious

It was a coffee-chocolate cheesecake. We used crushed chocolate graham crackers to make the crust. The syrup is homemade caramel. I don't remember everything that went into the filling but I do know there was cream cheese, kahula, and sugar.

I made a Buche De Noel.
Ingredients:
Cake:

6 Eggs -at room temperature
2 teaspoons Vanilla Extract
2 teaspoons instant coffee powder
1/2 cup cocoa powder
1/4 teaspoon salt
1 cup Sugar
1 Tablespoon Corn Starch
2/3 cup Flour - 1 Tablespoon (explained in Instructions)

Mint Icing:

1/2 cup of Butter (softened but not melted) 1/2 cup is usually 1 stick of butter, the stick should have labels on wrapper
1/2 teaspoon of mint extract
1/4 teaspoon of vanilla extract
1 and 3/4 cups of powdered sugar
Milk or Heavy cream as needed (to get the consistency you want)

 
Instructions:

I forgot the salt and Cocoa powder in the Cabinet for the picture >-< They appear later on though.
Step 1. Gather up your ingredients.

 
Step 2: Get 2/3 cup of flour and put it into a small bowl. Remove 1 Tablespoon of the flour and put it back into the container. Now take 1 Tablespoon of Corn Starch and mix it with the flour. This will give you 2/3 cup of "cake flour".

Step 3: Now mix the Flour and Corn starch into a bowl with 1/2 cup of cocoa powder and 1/4 teaspoon of salt. Blend them together evenly. It will help when mixing it into the cake batter later. (I moved it to a slightly larger bowl due to more contents)

Step 4: In a Large bowl, break open your 6 eggs, pour in 2 teaspoons of Vanilla Extract and add in your 2 teaspoons of Instant Coffee Powder. With an electric beater you will need to blend them together until they are kind-of bubbly and airy.

Step 5: Now you will add 1 cup of sugar to the egg mixture. Use the beater to blend it together, don't add it all at once though, you want to slowly integrate it all into the mixture until it is blended thoroughly and slightly airy again. (Didn't take a picture of this step because it will look the same as previous step after it is beaten)
 
Step 6: Pre-heat your oven to 350 degrees Fahrenheit. It will most likely be done preheating as you finish this step. With a Spatula you will be folding the cocoa mixture (cocoa, flour and salt from earlier) into the egg mixture you just made. Pour about 1/3 or 1/4 of the cocoa mixture into the bowl with the eggs and fold the egg mixture over the cocoa mixture until it is mixed into it. Keep repeating this until all of the cocoa mixture is mixed into it.

 
Step 7: In a rectangular 10x16 inch un-greased pan, pour the mixture until it covers the pan. I used Parchment paper and Aluminum foil over the pan so I could pull it out later. (it stuck to the paper a good deal but it would have been worse if it were directly in the pan) Place it in the oven around the middle and cook at 350 Fahrenheit for 10 minutes or until the cake seems done and is a little airy.

Step 8: When the cake is done cooking set it aside for it to cool completely so the icing can be put on later.

 
More Instructions:

Ok, now it's time to work on the mint icing while the cake is cooling.
Step 1: Get 1/2 cup of softened butter. You can put it in the microwave for a little bit in order to make it soft. Put the butter in a Medium to large bowl and beat it until it is like a paste or cream.

 
Step 2: Now pour 1/2 teaspoon of Mint Extract and 1/4 teaspoon of Vanilla Extract in with the butter and beat it again, it will become just like before, only a little creamier.

 
Step 3: Add in 1 and 3/4 cups of powdered sugar to the bowl.

 
Step 4: Pour in a small splash of Milk or Heavy Cream and beat the mixture together with the beater. Add more Milk or Heavy cream until you get the consistency you are looking for.

Tadah! Icing is ready, now assuming the cake is cooled off we can move onto the next steps

 
Final Instructions:

Now that our Icing and cake are ready, we can combine the two.
Step 1: I placed the cake in the freezer for a short period of time 2-4 minutes to make the foil peel off a little easier. So, peel of all the foil from the cake, you won't be wanting to eat any of that. Try not to tear your cake up too much, that's for when we try to roll it.

 
Step 2: Spread your icing across the 1 side of the cake, you want a thin and even layer of icing.

 
Step 3: With waxed paper on the outside you can start to roll the cake by putting one of the short sides in and rolling it over. (My cake split multiple times while rolling it, so don't expect things to come out all that pretty) After you are done rolling it you should get something like this, minus the Marshmallow snowman I made and the fake leaves.

Edit: Oh yeah, I also put powdered sugar on the outside which is optional.
