Given the clues so far, especially the one that it is someone who is normally trustworthy, there are a few other names that crossed my mind.

Leonis drank the rum! (It took years, but we drove him to it. ) That's why we haven't seen him around lately -- he's sleepin' it off!

Another possibility that wanders across my mind is King Arthur. Mayhap he didn't drink it himself, but needed it to throw a grand party for his subjects. Or, he's king of the pirates. Or... something.
